St. Patty's Day 2011

The weather was BEAUTIFUL on St. Patricks day so a few of the ladies from my table at MOPS got together and took the kids to feed the ducks at the lake!

Luckily, everyone wore their green and no one got pinched :)

I can't believe how big Luke looks here, standing next to a 6 year old!

Thanks for a fun day ladies! Can't wait to do it again soon!

I made this the other night for dinner and all I have to say is YUM! Seriously, the easiest thing I've EVER made! Oh and FYI, tasted even better the next day as leftovers! :)

Potato Soup:

1 30oz bag frozen shredded hashbrowns
3 14oz cans chicken broth
1 can cream of chicken soup
1/2cup onion, chopped
1/4 tsp ground pepper (I added a little more and a little salt:)
1 8oz package cream cheese (not fat free.. it wont melt! :)

In crockpot, combine everything EXCEPT cream cheese. Cook on low 6-8 hours. About 1 hour before serving, add cream cheese and keep heated until thoroughly melted. (I added the cream cheese after 6 hours and then let cook an additional hour or so)
Serve w/cheese, sour cream, bacon bits, green onions or whatever else makes you smile!

Celebrating Luke!

We decided to keep Luke's birthday REAL low key this year. With us putting a lot of money into decorating/landscaping the house, we decided something small with just family would be fine. Turned out to be really fun and most importantly, Luke had a GREAT time!

My parents, sister and grandparents all came over the evening of Lukey's birthday for presents, pizza, a trip to Chuck E Cheese and of course CAKE!

2 years...

It's 3am they're all asleep and no one's here to see

As we rock slowly back and forth

My baby boy and me.

His little head is feather light tucked up against my chin.

I hold his tiny hand in mine and stroke his baby skin.

The house about us creaks and groans

the clock hand creeps around

He snuggles closer to me still

and makes his baby sounds.

I love these quiet hours so much and cherish every one.

Store memories up inside my heart for lonely nights to come.

All too soon he'll be grown up, his need for Mommy gone.

But until then I still have time for kisses & for song

Time for quiet hours like this with him cuddled in my arms

where I wish he'd always stay

protected, safe and warm.

And yet I know the day will come

when this tiny little hand...

will be much bigger than my own,

he'll grown to be a man!

But until then he's mine to love

with no one here to see..

as we rock slowly back and forth..

Elephants, Monkeys and Rhinos.. Oh my!!

This weekend, the weather was BEAUTIFUL so we decided to head out to the San Diego Zoo! We didn't get out there until around noon, but we still had plenty of time to see all the animals and enjoy the gorgeous San Diego weather!

I know it doesn't look like it, but Luke IS saying "cheese"... so is James :)
