Philly Cheesesteak Stuffed Peppers

I found this recipe on none other than Pinterest. Seriously SO good! James said it's his new favorite meal! I'm surprised I like it, I'm not a fan of green bell peppers or onions but it is definitely one of my faves too!
Here's what you need:
8oz this sliced roast beef (yes lunch meat from the deli..see, EASY!)
8 slices provolone cheese
2 large green bell peppers
1 sweet onion
6oz bella mushrooms
2tbs butter
2tbs olive oil
1tbs garlic-minced
salt and pepper to taste
-Slice peppers in half lengthwise- remove ribs and seeds
-Slice onions and mushrooms- saute over medium heat with butter, olive oil, garlic, and salt & pepper. Saute until onions and mushrooms are nice and carmelized.
- pre heat oven to 400
-Slice roast beef into thin strips and add to onion/mushroom mix and cook for 5-10 minutes
-line the inside of each pepper with a slice of provolone cheese
-fill each pepper with meat mixture until nearly overflowing
-top each pepper with another slice of provolone cheese
-bake 15-20 minutes until cheese on top is golden brown

Easy, Healthy, DELISH!
*** before filling my peppers I baked each of them for about 10 minutes at 350.. a few people said their peppers were too crunchy and prebaking them for a few minutes made them PERFECT**
